45 freezer-friendly vegetarian recipes, including breakfasts, main dishes, snacks and desserts. Most of these recipes are also vegan and/or gluten-free!
Freezer-friendly recipes have been a popular request lately. I don’t blame you, there’s nothing better than to have ready-made recipes in the freezer when you don’t feel like cooking. And for many (including me), the motivation to cook has been low lately.
For that reason, I’ve compiled all of my favorite freezer-friendly recipes to make your life just a little easier. I hope you’ll love them!
How To Best Freeze Your Recipes
Every recipe will be different, but here are my general recommendations:
First, if the recipe is warm, let it cool completely first. Don’t leave them on the counter for more than two hours. I personally let mine cool for 30 minutes, then transfer them to the fridge to cool down completely.
Once it’s completely cold, transfer the food to airtight containers or bags. I’d recommend avoiding plastic bags (for environmental reasons). I love using these reusable stasher bags instead, as well as glass containers or mason jars. You can also clean and reuse salsa jars or other food jars. Make sure to leave some room at the top of your jars or containers as the content may expand when cooled and could break the jars (I’m especially thinking of soups).
A general rule would be to keep your recipes in the freezer for up to 3 months. After this, you may start to see signs of freezer burn.
Finally, for recipes that aren’t warm, such as granola bars, pop them in an airtight container or bag whenever you want!
Freezer-Friendly Vegetarian Recipes
Breakfasts
Have you ever made pancakes or waffles, just to be stuck with leftovers? Why not cook them and store them in the freezer for later use! I have several waffle and pancake recipes for you guys, plus a simple granola recipe that can be kept in the freezer.
Tip: Add frozen pancakes, waffles or bread slices directly to the toaster to warm them up in the morning!
Main Dishes
Many of these freezer-friendly recipes are soups, but I included other less obvious choices for you guys. You’ll find casseroles, curries, veggie burgers and more!
Tip: Freeze rice, along with curries or stews. They thaw perfectly together in the microwave!
If you’re freezing a pasta casserole, such as lasagna, try freezing it once it’s assembled and before baking. You can then let it thaw and bake it once you’re ready. It will result in a better texture than freezing it after it’s done baking. However, both methods will work.
Snacks
Did you know that energy bites, granola bars and sweet breads can easily be kept in the freezer? Find all of my favorites below.
Tip: No-bake date-sweetened snacks can be eaten directly from the freezer! So keep a container full of no-bake bars and bites in the freezer for a quick snack.
Desserts
Many of these desserts are obvious freezer-friendly recipes. You’ll find several ice cream recipes, as well as a sorbet. I also included some of my favorite no-bake date-sweetened treats, which freeze perfectly.
Tip: All these desserts can be eaten straight from the freezer! If it’s particularly frozen, simply let it sit at room temperature for 10 minutes.
