Shredded Tofu Bacon Wrap FAQ:
Yes! To make this recipe gluten-free, use a gluten-free tortilla and swap the soy sauce for tamari.
Yes! To make this recipe low FODMAP, use a gluten-free tortilla and skip the garlic and onion powder (I recommend using garlic-infused oil to add some of that flavor back). Make sure to use low FODMAP condiments (like the ones from FODY Foods) and vegetables. Good options include bell peppers (less than 1 cup serving), leafy greens (spinach, arugula, kale), tomatoes, and cucumbers.
Yes, the prepared shredded tofu freezes well. I love to meal prep a double batch and freeze it for later use. I recommend freezing it in a single layer first (in a large silicone bag or on a baking sheet). Once slightly frozen, you can transfer it to an airtight container (or leave it in the silicone bag). This will prevent the tofu from freezing in a large clump, which would require thawing the entire batch at once. You can then only take out what you need for your wraps. Reheat it in the microwave.
