Ingredients
Shredded Tofu Bacon
4tablespoonssoy sauce,low sodium
1tablespoonnutritional yeast
2teaspoonsliquid smoke
1/2tablespoonrice vinegar
1teaspoontoasted sesame oil
1teaspoonsmoked paprika
1teaspoononion powder
1/2teaspoongarlic powder
2tablespoonsolive oil
1block (400g)extra-firm tofu,shredded

Instructions
In a bowl or jar, whisk together the soy sauce, nutritional yeast, liquid smoke, sesame oil, rice vinegar, paprika, onion powder and garlic powder. Set aside.
Heat 2 tablespoons of olive oil in a large non-stick pan over medium heat. Add the shredded tofu and cook for 5-8 minutes or until it starts to get slightly crispy and golden. Stir occasionally and not too often to allow time for the tofu to get golden.
Add the prepared sauce and stir until combined. Cook over medium heat for another 5-8 minutes or until it reaches your desired doneness, stirring occasionally.
Serve the shredded tofu bacon in a wrap with your favorite vegetables and condiments.
Notes
I love preparing my wraps with vegan mayonnaise, mustard, lettuce, shredded cabbage, cucumbers, tomatoes and pickled banana peppers. Use your favorite fillings.The liquid smoke is important to add a bacon-like flavor. You can try it without if you can't find it, but I highly recommend it.The tofu bacon is not meant to be crispy. It will be lightly soft with some crispy edges. You can cook it longer for a crispier tofu.The "bacon" marinade is inspired by Rainbow Plant Life's tempeh bacon.
