Here’s a quick step-by-step guide for making peanut butter cookie dough bites at home.
Add the oats, dates, peanuts, peanut butter, coconut oil, vanilla, and salt to a food processor. Process until the mixture sticks together when pressed.
Add the cacao nibs or chocolate and pulse a few times to combine.
Using your hands, form the dough into balls. You can adjust the size to your liking.
This recipe is low FODMAP in the recommended serving (one ball) when making 16 balls or more. Note that dates are high in sorbitol and fructan when having 2 or more. One ball will contain one date or less in the recommended serving size.
You can make this recipe using sunflower seed butter instead of peanut butter, and cashews instead of peanuts. For a nut-free option, use sunflower seeds instead of peanuts. I recommend using the original SunButter.
To make this recipe completely gluten-free, make sure to use gluten-free certified oats.
This recipe is naturally vegan and dairy-free when using cacao nibs instead of chocolate. If using chocolate, you can choose a vegan option. My go-to chocolate bar is the Lindt 70% Madagascar chocolate, which is accidentally vegan. Enjoy life is another good vegan and allergy-friendly option if you want to use mini chocolate chips.
These are great eaten as is for a snack. You can also stir them into vanilla ice cream (like this homemade option) or in banana ice cream.
