Matcha coconut energy bites. These easy energy bites are made vegan and gluten-free with just a few pantry ingredients. Plus, there’s no food processor needed!
If you’re looking for a sweet snack to give you energy, look no further. These little bites contain a good balance of carbs and protein to keep your energy levels steady, plus a little caffeine boost from the matcha. Oats and maple syrup offer some carbs, while the almond flour and cashew butter give these bites plant-based protein and healthy fats.
The best part? These little bites have a flavor similar to matcha cookies.
What you need: Cashew butter, maple syrup, almond flour, coconut flour, oat flour, shredded coconut, matcha, vanilla extract and salt.
Start by combining the cashew butter, maple syrup and vanilla extract in a mixing bowl. Stir until you get a creamy and smooth mixture.
Next, add the almond flour, coconut flour, oat flour, matcha and salt. Stir everything together until combined. The mixture should stick together and should be easy to form into little balls. Roll each ball in shredded coconut to coat.
This recipe is best stored in an airtight container in the refrigerator. It can also be stored in the freezer for longer. They can be eaten straight from the freezer like most energy bites, but will be harder.

Hi Marjorie, matcha can be found at most health food stores here in Canada in the tea/coffee section. You can also find it online. I know Amazon has a few options. I hope this helps and I hope you'll enjoy the recipe!
