These carrot cake waffles are made with whole wheat flour and a good cup of shredded carrots. There’s also applesauce for a touch of sweetness, which also makes the waffles extra soft on the inside, while staying crispy on the outside.
All you need is 20 minutes of preparation and you’ll have 6 fluffy waffles for a delicious breakfast or brunch.
Here are the steps to make whole wheat carrot cake waffles at home.
In a medium bowl, whisk together the eggs, apple sauce, milk, melted butter and vanilla. Add the remaining ingredients and mix until well combined.
Spray the inside of the waffle maker with oil or lightly coat with butter. Turn on the waffle maker to your desired setting (I used dark). Scoop about ¾ cup of the waffle batter and spread on the waffle maker. Close and let cook for 5-6 minutes or until cooked to your liking.
Serve with coconut whipped cream, walnuts, raisins, maple syrup or other desired toppings.

This sounds so delicious!! What flour or combo of flours would you recommend gluten-free folks use for this particular recipe?
Hi! I haven't tested any gluten-free versions yet, sorry! You could try a gluten-free flour blend. Otherwise, a light buckwheat flour may make some good hearty waffles. Hope this helps!
