Pistachio Energy Bites

5-ingredient pistachio energy bites made in less than 15 minutes. All you need is pistachios, dates, coconut, salt and almond extract. Keep them plain or top each bite with a drizzle of dark chocolate. These little bites make for a nutritious snack containing fiber, protein and healthy fats. Keep a batch in your freezer for a nourishing and delicious snack throughout the week.

How to Make Pistachio Energy Bites:

Here are the steps to make simple pistachio energy bites at home.

  1. Blend the Ingredients

    Add pistachios, Medjool dates, coconut, salt and almond extract to a food processor. Process until the mixture sticks together when pressed.

  2. Form the Balls

    Roll the mixture in the palm of your hands to form 12 little balls. Top each ball with a drizzle of chocolate if you would like. Or keep them plain. Enjoy!

How Do I Store Energy Bites?

Store energy bites in an airtight container in the fridge for 1-2 weeks or in the freezer for up to 3 months. They can be eaten straight from the freezer.

What Can I Use Instead of Almond Extract?

If you don’t have almond extract, you can use vanilla extract instead. This will of course change the flavor of the bites, but will still be delicious.

What Can I Use Instead of Coconut?

If you don’t like coconut, you can swap it for more pistachios.

Ingredients

  • 1 cup shelled pistachios, unsalted
  • 1 cup Medjool dates, pitted
  • 1/4 cup shredded coconut, unsweetened
  • 1/4 teaspoon fine grain sea salt
  • 1/4 teaspoon almond extract, or more to taste
  • Dark or semi-sweet chocolate chips, for topping (optional)

Instructions

  • Add the pistachios, dates, coconut, salt and almond extract to a food processor. Process until the mixture sticks together when pressed.
  • Roll the mixture in the palm of your hand to form 12 little balls.
  • If desired, drizzle melted chocolate on each bite.
  • Store in an airtight container in the fridge or freezer. You can eat them straight from the freezer.

Notes

If your dates are dry, you may need to add a splash of water or melted coconut milk to help the mixture stick together when pressed. I haven’t found this to be necessary with Medjool dates, which is what I recommend using for the best results.
If you dislike coconut, you can swap the shredded coconut for more pistachios.
If you don’t have almond extract, you can replace it with vanilla extract. This will of course add a different flavor to the bites.
