Salted pistachio energy bites made with Medjool dates, pistachios, shredded coconut, almond extract and sea salt. This nutritious and simple no-bake recipe makes for a perfect meal-prep snack.

Ingredients
1cupshelled pistachios,unsalted
1cupMedjool dates,pitted
1/4cupshredded coconut,unsweetened
1/4teaspoonfine grain sea salt
1/4teaspoonalmond extract,or more to taste
Dark or semi-sweet chocolate chips,for topping (optional)
Instructions
Add the pistachios, dates, coconut, salt and almond extract to a food processor. Process until the mixture sticks together when pressed.
Roll the mixture in the palm of your hand to form 12 little balls.
If desired, drizzle melted chocolate on each bite.
Store in an airtight container in the fridge or freezer. You can eat them straight from the freezer.
Notes
If your dates are dry, you may need to add a splash of water or melted coconut milk to help the mixture stick together when pressed. I haven't found this to be necessary with Medjool dates, which is what I recommend using for the best results.If you dislike coconut, you can swap the shredded coconut for more pistachios.If you don't have almond extract, you can replace it with vanilla extract. This will of course add a different flavor to the bites.
