Cozy Vegan Gingerbread Latte

A cozy vegan gingerbread latte made in the blender! This latte is made with cashews, dates, molasses, coffee and a few holiday spices. A delicious and nutritious holiday drink.

Are you ready for holiday recipes?! I have plenty of festive recipes coming over the next weeks, starting with this cozy vegan gingerbread latte.

This latte is made with just a few pantry ingredients and is made creamy and frothy thanks to a blender! Just add cashews, dates, molasses, coffee and a few spices to the blender, blend and you’ll have a delicious frothy sweet drink.

Dip some fresh gingerbread cookies into your latte or enjoy it by itself. Either way, it makes for a perfect and nutritious warm drink to enjoy over the holidays.

What to do if your blender can’t process dates or nuts?

If your blender is on the weaker side, try soaking the dates and cashews overnight. If you’re still worried, you can substitute the nuts and dates for nut butter and maple syrup. Use about 1-2 tablespoons of maple syrup to taste and 2 tablespoons of cashew butter.

Can you make this recipe nut-free?

Yes! Instead of cashews, try using 2 tablespoons of sunflower seed butter. You can also try my salted maple hot cocoa for a nut-free cozy drink.

Why not use plant-based milk?

Every time I share a cozy drink, someone asks why I don’t use plant-based milk to make it creamier. The answer? The nuts and/or nut butter blended into coffee makes it creamier than plant-based milks could! Think about it: Nut milks are made by blending nuts in water. This way, you save yourself the time of warming up some milk. Of course, if you want to make it even creamier, you can add some steamed plant-based milk on top, just keep in mind that it will dilute the flavors.

Cozy Vegan Gingerbread Latte

A cozy vegan gingerbread latte made in the blender! This latte is made with cashews, dates, molasses, coffee and a few holiday spices. A delicious and nutritious holiday drink.

Ingredients

  • 3 cups prepared coffee, hot
  • 1/4 cup cashews, raw or dry roasted, unsalted
  • 3 Medjool dates, pitted
  • 1 tablespoon blackstrap molasses
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon, ground
  • 1/4 teaspoon ginger, ground
  • 1/8 teaspoon nutmeg, ground
  • Small pinch of clove, ground

Instructions

  • Prepare your coffee using your preferred method (see notes).
  • Add all the ingredients to a high-speed blender. Add the hot coffee. Blend until smooth, about 15-30 seconds. Taste and adjust as needed. Serve immediately.

Notes

Adjust the latte to taste. Add more or less dates, more spices, etc. I tried this recipe with 1/2 a teaspoon of ginger and it was good, but it definitely had a ginger kick.
You can add a small amount of steamed oat milk on top for extra creaminess. Just keep in mind that it will dilute the flavors.
I prepare the coffee using a French press or by making an Americano with our espresso machine. Use your preferred method. 
To make it nut-free, try using 2 tablespoons of sunflower seed butter instead of the cashews.
If your blender is on the weak side, try soaking the dates and cashews overnight. Or substitute them with 2 tablespoons of maple syrup and 2 tablespoon of nut or seed butter to taste.

  • Planning to make this, but use 2 tablespoons hemp seeds and my herbal alternative Dandy Blend. The cookies are adorable but I see no mention of a recipe or if they're store bought? Would love to know more on those cookies. Happy festivities!
