Lately I feel like I’ve been living off avocado toasts.
They’re so easy, filling and nutritious, I figured they were the perfect meal while moving in our new apartment. After a while though, plain avocado and lemon on toasts can become a bit boring. That’s when I started mixing things up and trust me, these avocado toasts are NOT boring! I came up with 3 different toasts, so let’s get right into it.
My first avocado toast includes strawberries, melted Brie cheese (the best part!), balsamic vinegar and pistachios. I think this one is my favorite. I mean, strawberries, Brie and avocado!? There’s no better combination. Not during summer anyways. If you’re skeptical about adding fruits to your toast, don’t be, it’s the ultimate sweet and savory combination! Try it and you’ll know why this one is my favorite. 🙂
Sweet strawberries are paired with salty, melted brie to make a fresh and filling summer lunch. The avocado makes this toast creamy and nutritious and pistachios are added for a crunch! Top it off with a drizzle of balsamic for the most flavorful avocado toast!

Ingredients
1slicebread of choice
1/4cupbrie cheese
1/2 ripe avocado,pitted
1-2fresh strawberries,sliced
1teaspoonbalsamic vinegar
1/2tablespoonpistachios,chopped
Instructions
Preheat oven to 350ºF or use a toaster oven.
While your oven is preheating, crush your pistachios (I used a mortar and pestle). Set aside.
Sprinkle the brie over your bread and bake for 6 minutes. Set on broil after for 1 minute.
Remove your toast from the oven and top with sliced or mashed avocado, strawberries, balsamic and pistachios.
Notes
Feel free to double this recipe to make it a filling meal. You can also add one more slice of bread to make it a sandwich or serve it with a salad on the side.Bake them longer if you like a crispier toast.
My second toast is a must-try if you love feta (who doesn’t?!). I added oregano, lemon juice, green onions and parsley to give it a Greek-inspired taste (think Greek salad minus the tomatoes and olives… you could always add those too!). If you want to get a little crazy, serve it with a Greek salad… and falafels! Okay, I’m getting a little carried away.

My third and final toast! This one is Shaun’s favorite (I think it’s all about the goat cheese, but I don’t blame him). I first tried this one with avocado, toasted pepitas and tahini sauce only, but I felt like it was missing something. The next time I added goat cheese and I was sold! I never want to share a recipe if I’m not completely satisfied, but this one definitely passed the test! If you’re vegan, I think this one would be delicious with hummus instead of cheese. 🙂

2tablespoonsgoat cheese,crumbled
1/2ripeavocado
1/2tablespoonpepitas (pumpkin seeds),roasted
Lemon Tahini Sauce
1tablespoontahini
1/2tablespoonlemon juice
1tablespoonwater
Salt to taste
Instructions
Preheat oven to 350ºF or use a toaster oven.
While the oven is preheating, prepare your lemon-tahini sauce: In a small bowl, whisk together your tahini and lemon. The mixture should thicken. Whisk in the water. Add more if the sauce becomes too thick.
Spread your goat cheese on top of the bread and bake with the pepitas (on the same baking sheet) for 6 minutes. Set to broil for 1 minute, keeping an eye on the pepitas.
Remove from the oven and top with sliced or mashed avocado, lemon-tahini sauce and your toasted pepitas.
