Ingredients

  • 1 batch Buffalo soy curls (recipe below)
  • 4 12" flour tortillas (see notes)
  • 4 large handfuls leafy greens of choice

Tahini Caesar Dressing

  • 4 tablespoons tahini
  • 3 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 small garlic cloves, grated
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon vegan Worcestershire sauce
  • 1/4 teaspoon sea salt
  • 1-2 tablespoons water, as needed

Optional Add-Ins

  • Avocado, sliced or cubed
  • Cucumber, thinly sliced
  • Nutritional yeast, sprinkled on top

Instructions

  • Prepare the Buffalo soy curls following the recipe below.
  • While the soy curls are cooking, prepare the Caesar dressing (or use store-bought): In a small jar, whisk together all the Caesar dressing ingredients, except the water. Add water, a little at a time, until the sauce reaches your desired consistency.
  • Assemble the wraps. Serve each tortilla with a handful of lettuce, cooked soy curls, a generous drizzle of Caesar dressing and other fillings of choice.

Notes

I love making this wrap with naan. You can use store-bought vegan naan if you can find it. If you're feeling ambitious, I highly recommend making this homemade naan recipe. I make 4 larger portions instead of 8 smaller naan.
I love using more delicate leafy greens, but kale does work well too if you enjoy more texture. Make sure to massage the kale to make it more tender. My go-to is mixed greens, but Romaine is a good one.
You can use store-bought vegan Caesar dressing or your favorite Caesar dressing. If you have extra dressing, I recommend serving a small salad on the side.
