Ingredients

  • 1 cup Medjool dates, pitted
  • 1 1/2 cups rolled oats (130g)
  • 3/4 cup walnuts (75g)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine grain sea salt
  • Water or melted coconut oil, as needed

For Serving:

  • Yogurt of choice
  • Fresh fruits of choice

Instructions

  • Add the Medjool dates, oats, walnuts, vanilla and salt to a food processor. Process until you get a crumbly mixture. Add water or melted coconut oil, no more than 1 tablespoons at a time. Process until the mixture sticks together when pressed.
  • Divide the mixture into 9 regular muffin cups or liners. Press well to form little cups.
  • Before serving, fill the cups with a large spoonful of your favorite yogurt and fresh fruits of choice. Serve immediately.

Notes

I recommend using silicone muffin pans to make the cups easier to remove. I just used silicone muffin liners that I place in my muffin pan.
Suggested fruits: Raspberries, blueberries, blackberries, chopped cherries, peaches, strawberries, kiwi or other fruits of choice.
Suggested yogurts: I recommend choosing a thicker yogurt. This will make the cups easier to eat. My favorite is the Maison Riviera oat-based vanilla yogurt. Greek-style yogurts will also work well. You can choose sweetened or unsweetened yogurts, depending on your preference.
For Advance Prep: I don't recommend filling the cups with yogurt until they're ready to serve. If preparing this snack in advance, I recommend storing the empty cups in an airtight container in the fridge or freezer. Fill with yogurt and fruits when ready to serve.
Feel free to swap the walnuts for cashews or pecans. Almonds would work too, but the texture will be different. You can choose raw or dry-roasted, unsalted nuts.
